Cookies and Cream Cupcakes







INGREDIENTS:


1 Devil's Food Cake Mix (plus ingredients on box)
1 pack of Oreos


Make the chocolate cake as directed but add Oreo crumbs to the batter. (Add as many as you want, I added about 7 Oreos. You just need to keep count so you have enough to top each cupcake with an Oreo at the end. So save approx 24 Oreos for the end, and use the rest for the batter and the frosting) Cook the cupcakes and let them cool. Frost with the recipe below. (Just fyi, this frosting recipe makes a TON, but I think the cupcakes look better with a lot)


Vanilla Buttercream Frosting:
1 cup (2 sticks) unsalted butter, room temp
6 to 8 cups powedered sugar
1/2 cup milk
1 tsp vanilla
crushed oreos

Cream butter with electric mixer until smooth and creamy, 2-3 minutes. With mixer on low speed, add 6 cups sugar, milk, vanilla; mix until light and fluffy. If necessary, gradually add remaining 2 cups sugar to reach desired consistency. Stir in crushed Oreo's (you can use as much as you want, I put enough in until it looked like cookies and cream ice cream).

Once frosted, top with a whole Oreo. These are sooo cute. and tasty. enjoy.
